Leftover Ham Recipe
I do not know about you, but I just absolutely freak out with what I am going to serve for the holiday dinner. You may have new people coming to the house and you want to make a great 1st impression and as you know it things just do not work out the way you plan it. Well I tried to plan it where there was not leftovers, but just like countless of other families after celebrating a major holiday there are always leftovers and you do not want to put them to waste. That was the case for us after having family and friends over for Thanksgiving, we arrived at the Saturday afterwards and had some leftover turkey ham.
This recipe can be recreated with any meat, especially because Christmas is less than 2 weeks away, there is bound to be leftover ham, but in our case we had leftover turkey ham.
The turkey ham was one of the last items that we had to get rid of (eat) right before we headed back to our changed diet (reduced fat, more vegetables and the use of a blender for at least 1 meal a day). We have several kitchen gadgets, but I only chose to pull them out when I have plenty of time to enjoy it and not be in a rush. Since this was a long weekend, we decided to make an omelette which we do not have on a regular basis and we used the Presto Electric Griddle.
This griddle has not been used for over 1 1/2 years and it was used only 1 time prior, so to me it is like new and with it we will share our Leftover Ham Recipe.
We started with 1/2 an onion and about 2 cups of cooked turkey ham. We made sure that the onions were almost cooked completely and the 5 scrambled eggs were added to the top it. As you see some of the turkey ham was put to the side because we used a lot.
After the eggs started to become firm, 2 pieces of sliced cheese were added to the top of the eggs, meat and onions and the cheese was the perfect contrast to the sweetness of the turkey ham.
After a few more minutes of moving the eggs around to make sure they were done it was time to fold the eggs over and shortly thereafter, enjoy our Saturday morning breakfast.
This omelet was enough for 3 people, but seeing as though we did not care too much about calories that day we decided to split the omelette down the middle. Remember that turkey ham off to the side? Well we put it on top for a finishing touch.
