Chicken Sausage Switch with Al Fresco
As most of you have heard there is a big push to switch from pork to chicken, particularly in the sausage category. I jumped upon that band wagon as well due to the fact that hubby and I are attempting to lose some weight before our anniversary this August.
I chose the Roasted Red Pepper and Asiago, but just for the record they have 10 different flavors so feel free to pick and chose depending on the recipe you have in mind. I had to have something quick/fast to be able to whip up quickly during the middle of the week and thanks to the fact that the chicken sausage is pre-cooked, it only took a couple of minutes. The rice was actually the longest to cook for both recipes. Oops, I did not mention that I have created 2 recipes and they both took 15 minutes to make and that once again is due to the cooking time for the rice.
Red Bean and Rice
Ingredients:
16oz can of red beans
1 cup of cooked rice
Mesquite seasoning
Frozen peppers/onions mix
1 package of Al Fresco Dinner Fully Cooked Chicken Sausage
Dash of hot sauce if desired
Directions:
Cooked rice and put it to the side
Put chicken sausage and pepper/onion mixture and seasoning in pan with a little bit of oil and cooked until done. Directions are on the back of the package. I added oil to help brown the sausage more. Dice the meat to the size you like. I made quarters and it was perfect.
Add the beans, rice and chicken sausage together and taste and if necessary season with a bit of salt and serve.
Chicken Sausage Stirfry
Ingredients:
1 cup of cooked rice
1 16oz bag of stir fry vegetables
1 tablespoon of Soy Sauce
1 package of Al Fresco Dinner Fully Cooked Chicken Sausage
Salt and pepper if desired
Directions:
Cook chicken sausage with little bit of oil just to help brown and cut up and put to the side. Prepare stir fry veggies as stated on the package and put to the side. Add meat back in the pan and add soy sauce. I had the meat and veggie mixture separate from the rice, but feel free to combine. Enjoy.
The switch worked. Chicken Sausage is a keeper. The Al Fresco Chicken Sausage has less fat, less calories, tasty and was not dry which was a fear for me. I prepared the chicken sausage with and without veggies and it was still moist. For more information check out Al Fresco ⇒Al Fresco All Natural
