Tasty Tomato Soup with Carrots
I do not know about where you are in the world, but here in Georgia we are dealing with 44 degrees and lower right now which is the perfect time for one of my comfort foods, soup. When I was much younger, I would love the soups my parents made which had all types of vegetables and meat. It was loaded with tomatoes, but the only challenge with their soup even though it most certainly warmed me up, it was not rich in nutrients by the time it finished cooking. So in an effort to obtain the nutritients, I decided to try making a soup in my blender, Blendtec and made sure it was a soup that was rich in fiber, vitamins A, C and K.
Tasty Tomato Soup with Carrots is great for those moms who do not have a lot of time to fix a more elaborate soup with little to no ingredients (fresh, canned or frozen vegetables).
After I blended and seasoned the soup, I topped it with seasoned tortilla chips and viola. It was wonderful. You can feel free to add cooked chicken, but use the pulse button on the blender to make sure there are still visible chicken pieces in the soup. I believe my parents would be proud of me.
