3 Ingredient Oatmeal Cookie

Sweets (any kind including chocolate bars, cookies, cupcakes and cakes) are regularly part of my diet. For the past 21 days we have been on a Daniel Fast and usually I go about making some type of dessert and I almost let this time pass without making some form of sweetie. I have been eating fruit and used that to get my sweets in, but nothing is like biting down into a moist, chewy cookie. To satisfy my need for sweets, I made a 3 ingredient oatmeal cookie that was very simple and it took less than 35 minutes including cooking time. Hubby is not feeling so well, so he took a nap and while he was napping I decided to go to work.

Oats, sliced almonds and aging bananas are the 3 ingredients that I used, however I did manage to add one more thing. That is the beauty of this recipe in that you can add many other items as you like. I added one surprise ingredient and that is a bit of orange juice. Hubby is fighting off a cold, so I wanted to put some Vitamin C in the recipe. Others will not be to tell unless you tell them.

I used a fork, Pyrex Mixing Bowl and 3 Piece Cookie Pan.

The measurements are as follows:
1/2 teaspoon orange juice

2 Bananas

1 Cup of Oatmeal

1/4 Cup Sliced Almonds

Mix with fork to desired consistency, place on cookie sheet sprayed with non-stick spray and then bake between 18-20 minutes. If you want harder cookies, then cook longer however I love moist cookies so I did not let them cook beyond 20 minutes on 350 degrees.

After hubby awoke from his nap I let him taste these 3 Ingredient Oatmeal Cookies and he loved them. I tasted them and they were good. I am sure that they were not that fattening or filled with many calories, so I will be adding this to the list of regularly used recipes.
