Less than a generation ago, veganism was considered beyond fringe. Even in 2014, only 1 percent of Americans were vegans. Fast-forward to today—in the last five years, the number of self-identified vegans has skyrocketed 600 percent. Impossible burgers are now available at Burger King, KFC, and Taco Bell. And, according to the Plant Based Foods Association, sales of dairy and meat alternatives grew by 20% in US supermarkets in 2018—that’s a $3 billion surge in coconut milk yogurt, tempeh bacon, and the like.

Above is a very small portion of just 10 out of 72 Reasons to be Vegan. Certainly a work in progress for me, but I like others have my reasons for wanting to change how and what I eat. I have enjoyed most of the ride, but it has been a challenge. Buttercream icing is my favorite and fried fish is my other favorite. I have not had a plant based buttercream icing yet, but it is certainly on my list.
My dad unfortunately passed recently and just to know that things could have been different for him it keeps me wanting to stay on this path. There are some great recipes out there and really you can make your own great meals, like below. A recipe is coming soon, so stay tuned.
